Taisho-Ken
Once you step in to the shop, you will smell the mackerel broth that stimulates anyone’s appetite, and at the same time, you will find a noodle making machine. Taishoken makes their own noodles everyday at the shop, and the smooth but firm texture is amazing.
Tsuke-men – Shoyu flavor ($6.75) Extra Noodles($8.25)
The rich shoyu taste soup has a base of pork and chicken and a few other ingredients, but the secret of this refreshing sourness is the sweetened vinegar. This is why even the ramen is served in a big portion, you are able to finish everything. The noodles for the tsuke-men are soaked in cold water after being boiled so that the noodles are very firm and not too soft.
Taisho-ken serves a lot of noodles, 240 grams (360g with extra noodles), almost the twice more than the normal ramen restaurants. Aside from being well-known for their large portions, the restaurant also serve Miso-based ramen and tsuke-men that they don’t usually have in Japan. The home-made miso with ground meat makes a rich tasting soup, the best kind to eat with noodles. Taishoken Hawaii reduces the amount oil in the soup compared to shops in Japan, but you can always ask for more!
