Roy’s Restaurant is a first-class restaurant that opened in Hawaii Kai in 1988, and has gone on to represent Hawaii with chains opening in the US mainland, Guam, and even Japan. Mixing cooking techniques from Europe, Asia, and the Pacific, and using fresh, local seafood, Roy Yamaguchi can be said to be one of the pioneers of Hawaiian Fusion Cuisine.
